§ VI · Brew Guides

Real methods. Real equipment.

Roots, nibs, and leaves behave differently from beans. Here is how to get the most from each substrate — dose, temperature, and time.

Cold Brew (overnight)

Slow, cold extraction for a smooth, low-bitterness cup. Best for the caffeine leaves.

Dose
55 g coarse grind
Water
500 g cold
Temp
Room temp / fridge
Time
12–16 hours, then strain

Moka

Stovetop pressure builds a concentrated, espresso-adjacent shot.

Dose
Fill basket, level
Water
To the valve
Temp
Medium stovetop heat
Time
~5 min until it gurgles

Cacao is moka- or press-only — never a paper filter or an espresso machine.

Orzo Espresso

A true 9-bar pull from roasted barley, with a dense crema-like foam.

Dose
18 g fine grind
Water
36 g out
Temp
93°C / 200°F
Time
25–30 sec extraction

Pour-Over (mesh)

Use a fine gold mesh, not paper — cacao oils clog paper filters.

Dose
25 g medium grind
Water
400 g
Temp
94°C / 201°F
Time
3 min total pour

Requires the Gold Mesh Filter. Paper will clog on cacao and chicory.

Phin

The Vietnamese drip filter: slow gravity extraction, deeply concentrated.

Dose
20 g medium-fine
Water
120 g
Temp
95°C / 203°F
Time
4–5 min drip
